Black Glutinous Rice Pudding

4 ounces Rose Brand black glutinous rice
2 cups water
½ inch fresh ginger root, peeled and bruised
3/8 cup dark brown sugar
¼ superfine sugar
1 ¼ cups Aroy D coconut milk, to serve

Directions:

  1. Put the rice in a strainer and rinse well under cold running water. Drain and put in a large pan, with the water.
  2. Bring to a boil and stir to prevent the rice from settling on the bottom of the pan. Cover and cook for about 30 minutes.
  3. Add the ginger and the brown and superfine sugar. Cook for about 15 minutes more, adding a little more water if necessary, until the rice is cooked and like porridge. Remove the ginger and serve warm, in bowls, topped with coconut milk.
