Cherry Tomato and Kaffir Lime Leaf Salad

400 g red and yellow cherry tomatoes, cut into halves
100 g shallots, thinly sliced
10 Cock Brand kaffir lime leaves, deep-fried until crisp then crumbled
6 tbsp extra virgin olive oil
2 tbsp lime juice
Sea salt
Freshly ground black pepper

Directions:

  1. Simply combine ingredients and toss.
  2. Check and adjust seasoning to taste.
